It’s a well known fact that my hometown of St. Louis is famous for its classic Gooey Butter Cake!
So let’s put a bit of a spin on that scrumptious dessert!
Chocolatey Delicious Gooey Louie Butter Cookies
4 oz. cream cheese, softened
4 tbsp. unsalted butter, softened
3/4 cup granulated sugar
3/4 cup all-purpose flour
1/4 cup cocoa powder
1 eggs + 1 yolk
1 tsp. baking powder
1/2 tsp. salt
1/3 cup confectioners’ sugar
1/2 tsp. Pure Vanilla extract
Preheat the oven to 325 degrees F.
In a large bowl add together the cream cheese and butter. Using a hand held mixer beat until very fluffy.
Slowly add the sugar to the cream cheese mixture while continuously beating until light and fluffy. Next add the whole egg, egg yolk and vanilla. Beat until thoroughly combined.
In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Add this to the cream cheese mixture in small increments, beating in between each increment.
Chill the dough in the fridge for at least 1 hour. (This is mandatory for this recipe).
Line a baking sheet with parchment paper. Place confectioners’ sugar in a shallow bowl.
Scoop out a heaping tbsp. of dough and form into a ball. The dough will be sticky. Roll the dough ball into the confectioners’ sugar and generously cover completely. Place onto baking sheet.
Bake for 14 minutes. The top of the cookies will be puffed and slightly wet. (Do not over bake). Let the cookies cool completely on the baking sheets before serving. Makes approx. 20 cookies.
