Ingredients

1 pound ground beef

1 tsp. salt

1/2 tsp. Chili flakes

1/2 tsp. black pepper

1/2 tsp. Smoked paprika

1 tbsp. chili powder

1 1/2 tsp. cumin

1 tsp. onion powder

1/2 tsp. dried oregano

1/2 tsp. garlic powder

1/4 cup all-purpose flour

2 cups beef broth

8-ounce can tomato sauce

15-ounce can black beans, rinsed and drained

1 cup frozen (no need to thaw) or can (drained) yellow corn

1 cup four Mexican cheese mix

cooked white or brown rice

Optional toppings: shredded lettuce, diced tomatoes, sour cream, chopped black olives, diced guacamole, hot sauce, diced scallion, Fritos and cilantro.


Instructions

In a large skillet over medium heat, add the ground beef, salt and pepper, and cook thoroughly. Drain excess grease.

Stir in the smoked paprika, chili flakes, chili powder, cumin, onion powder, oregano, garlic powder and flour. The mixture will be crumbly. Cook for a few minutes, stirring constantly, until the meat and spices are fragrant and sizzling.

Add the beef broth and tomato sauce whisking continuously and allowing mixture to thicken and bubble.

Stir in the back beans and corn. Bring the mixture to a simmer and cook approx. 10-15 minutes until thickened.

Serve the sauce over rice and sprinkle with Mexican cheese and add your toppings of choice!
