If you’re from St. Louis then you know all about Provel cheese.
Provel is a white processed cheese product particularly popular in St. Louis cuisine. It is a combination of cheddar, Swiss, and provolone cheeses and its gooey buttery consistency makes it the traditional popular topping for St. Louis-style pizza!
CopyCat Imo’s Style Pepperoni Pizza
Ingredients for Pizza
1 16 oz. Ready to Bake Pizza dough (I used Trader Joe’s)
1/2 tsp. Olive oil
1 tsp. Cornmeal
Pepperoni, sliced (your preference as to how many for topping)
1/2 cup white cheddar cheese, shredded 1/2 cup mozzarella cheese, shredded
1 cup provolone cheese, shredded
Ingredients for Tomato sauce
2 tbsp. Olive oil
1 clove garlic, minced
1 28 oz. crushed tomatoes
1 16 oz. tomato paste
1 1/2 tbsp. sugar
1 tsp. Dried basil
1/2 tsp. salt
1/4 tsp. thyme
1/2 tsp. Garlic powder
Freshly cracked pepper, to taste
1/2 tsp. Dried oregano, plus more for sprinkling
(Makes approx. 3 cups)
Instructions for Sauce
In medium saucepan add olive oil and garlic to and cook over medium heat for approx. 1-2 minutes, or until the garlic is fragrant.
Add the crushed tomatoes, tomato paste, sugar, salt, basil, oregano, thyme, freshly cracked pepper and garlic powder. Stir to combine.
Cover the sauce pan and allow to come to a simmer, then reduce the heat to low, and allow simmer for up to 30 minutes.
Instructions for Pizza Assembly
Preheat oven to 450 degrees F.
Allow refrigerated pizza dough to sit at room temp for 20 mins.
Remove from package and place on generously floured clean surface.
Roll out into a thin 12 in. circle.
Sprinkle corn meal onto pizza pan (this helps so dough won’t stick to pan).
Place on on pizza pan and brush with olive oil.
Spread layer of the sauce over the dough.
Layer with pepperoni slices, the cheeses and
sprinkle with remaining oregano.
Bake pizza for 15 minutes or until crust is golden brown and cheese is bubbly.
