Sirloin Steak Bites and Sautéed Onion Baked Potato
1/2 cup ketchup
1/4 cup water
2 tbsp. sugar
1/4 cup extra virgin olive oil
Splash of red wine vinegar
1/4 cup Worcestershire sauce
1/4 cup A-1 Sauce
1/2 tsp. Garlic powder
1/2 tsp. Onion powder
freshly ground black pepper
1 large sirloin steak
Ingredients for Potatoes
2 large russet potatoes
1 tbsp. Olive oil
Kosher salt and freshly ground black pepper
Ingredients for Onions
1 yellow onion, peeled and sliced
1 tbsp. Butter
1 tbsp. Olive oil
1 tsp. Sugar
Instructions For Marinade
Put all ingredients into bowl and whisk together.
Lightly sprinkle salt and pepper on both sides of steak. Cut into bite size pieces.
Add steak to marinade and coat evenly. Wrap bowl with aluminum foil and place in refrigerator. Marinade minimum of 1 hour before cooking.
Instructions For Potatoes
Preheat oven to 425 degrees F.
Wash and pat dry potatoes. Rub both with 1 tbsp. of the olive oil. Salt and pepper all sides. Place directly on tray in oven. Bake for 60 minutes or until skin of potatoes crisp and flesh is fork tender.
Instructions For Sautéed Onions
Heat the olive oil and butter in a large nonstick skillet over medium heat until it shimmers, about 2 minutes. Stir in sugar. Add the onion rings to the skillet. Use a wooden spoon to spread them evenly in the skillet. Sprinkle them with salt.
Cook the onions, stirring frequently, until they are soft and golden-brown, about 10-15 minutes. Using spoon remove onions from pan leaving the oil in skillet. Turn heat to high.
Spoon out steak bites in marinade and place in same pan as sautéed onions.
Cook for at least 2 minutes before stirring the steak pieces. You want to make sure you get a good sear on them. Continue cooking for another 2-3 minutes until they're golden brown. You may need to work in batches.
Building the Masterpiece
Transfer potato to place. Slice in half lengthwise. Fluff with fork. Add butter and top with steak bites and onions.
