If anyone ever tells me to "Just Stuff It", you better believe I'll use that idiom to my advantage!
Sloppy Joe and Cole Slaw Stuffed Baked Potato

Ingredients for Baked Potatoes
6 medium to large Russet potatoes
2 tbsp. Olive oil
Kosher salt
Ingredients for Sloppy Joes
1 tbsp. Butter
1 tbsp. Olive oil
1 pound lean ground beef
1/2 medium yellow onion, diced
1/2 green bell pepper, diced
2 cloves garlic, minced
1 (6 oz) can tomato paste
3/4 cup water
3/4 cup ketchup
1 tbsp. brown sugar
1 tsp. yellow mustard
2 tsp. Worcestershire sauce
1 tsp. Cumin
3/4 tsp. Chili powder
1/2 tsp. Kosher salt
1/4 tsp. Black pepper
1/4 tsp. red pepper flakes
Dash of hot sauce
Cheddar cheese and sour cream, for topping
Ingredients for Cole Slaw with Homemade Dressing
1 small bag store bought Cole slaw
3/4 cup mayonnaise
2 tbsp. white sugar
1 1/2 tbsp. Fresh squeezed lemon juice
1 tbsp. white vinegar
1/4 tsp. Garlic powder
1/4 tsp. Onion powder
1/2 tsp. Freshly ground black pepper
1/4 tsp. salt
Instructions for Baked Potatoes
Heat oven to 450 degrees F.
Using a dinner fork or a small knife, poke the potato at least 10 times on all sides.
Brush the potatoes with olive oil until completely coated on all sides. Sprinkle the potatoes with a generous amount of Kosher salt. Place them directly on rack in oven.
Bake for 50-60 minutes or until skin crisp and Potato fork tender.
Instructions for Sloppy Joes
Heat butter and olive oil in large skillet over medium to high heat. Add the beef and break apart into crumbles. Cook until browned. Add onion and bell pepper and cook until tender. Add garlic and cook until fragrant. Add tomato paste and water. Stir well. Add ketchup, brown sugar, mustard, Worcestershire sauce, cumin, chili powder, salt, pepper, and red pepper flakes. Stir well to combine. Cook over medium heat for approx. 15 minutes or until mixture has thickened. Remove from heat and set aside.
Instructions for ColeSlaw
Whisk mayonnaise, sugar, lemon juice, vinegar, garlic powder, onion powder, pepper, and salt together in a bowl until smooth and creamy.
Add to Cole slaw and mix thoroughly!
Using a small paring knife, slice halfway through the potato lengthwise. Gently squeeze to open. Fluff with fork. Add a pat of butter and allow to melt. Stuff with the coleslaw, sloppy joe and top with cheddar cheese and sour cream!
