Rainbow Fruit Ice Cubes


8 oz. Pineapple

8 oz. Cantaloupe

8 oz. Strawberries

8 oz. Blueberries

8 oz. Raspberries

Fresh Mint

Juice from 1 small lemon

Your favorite Beverage such as lemonade, sparkling water, or vodka (adults only).

Ingredients for Sugar Syrup

8 oz. white sugar

2 cups water

Instructions for Sugar Syrup

Combine the sugar and water in a saucepan and heat until the sugar dissolves. Simmer for 15-20 mins. until you get a sugar syrup. Allow to cool completely.

Instructions for Fruit Sorbet

Cut up whole fruits into cubes except for blueberries and raspberries.

Place the strawberries, blueberries and raspberries (one at a time) in small food processor and pulse to crush into small pieces. Add the simple sugar one tbsp. at a time while pulsing to make a smooth paste. (You will add total of 3-4 tbsp. of simple sugar to each fruit).

Add a squeeze of lemon juice.

Spoon sorbet into ice cube trays and freeze overnight.

Add the pieces of pineapple, cantaloupe, and fresh mint to ice cube tray and cover with water. Freeze overnight.
