Crispy Parmesan Smashed Potatoes with Spicy Catsup for Dipping
Ingredients for Smashed Potatoes
2 pounds small to medium yellow potatoes
1 1/2 tbsp. fine sea salt
4 tbsp. olive oil, divided
1 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. Smoked paprika
Freshly ground black pepper, to taste
2 tbsp. Fresh chives, chopped
1/4 cup Parmesan cheese, freshly grated
Ingredients for Spicy Catsup
1 cup Catsup
2 tbsp. Hot sauce
1 tsp. Chili powder
Instructions for Spicy Catsup
Combine all ingredients in a small bowl and stir well.
Instructions for Smashed Potatoes
Preheat oven to 425 degrees F.
Scrub potatoes clean and place them in a large pot. Fill with water until the potatoes are covered by 1 inch of water. Add 1 tbsp. of the salt to the water. Bring to a boil over high heat and continue cooking until the potatoes are easily pierced, approx. 25 minutes.
While the potatoes are cooking drizzle 1 tbsp. of the olive oil over a large baking sheet. Brush the oil so it’s evenly distributed over the sheet.
When the potatoes are done, drain them in a large colander and allow them to cool for about 5 minutes.
Distribute the potatoes evenly over the baking sheet. Using a potato masher gently smash each potato to a height of about 1/2 inch.
Drizzle the remaining 3 tbsp. of olive oil over the smashed potatoes. Sprinkle the potatoes with the garlic powder, onion powder, paprika, salt, and pepper. Place pan in oven and bake until the potatoes are golden on the edges, approx. 30 minutes (After baking them I turned broiler on high and let them bake for approx. 30-45 seconds just to give added crispness).
Remove from oven and sprinkle them with the Parmesan cheese and chopped fresh chives. Serve with Spicy Catsup for dipping.
