Peanut Butter Cookies with a Kiss💋.. care to join me?
1 and 1/2 cup all-purpose flour
1 large egg room temp
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter room temp
3/4 cup granulated sugar
1/2 cup packed light brown sugar
3/4 cup creamy peanut butter
1 teaspoon pure vanilla extract
20 plain chocolate candy kisses
Green and red decorative sugar (optional)
Whisk the flour, baking soda, and salt together. Set aside.
Using a hand or a stand mixer fitted with paddle attachment beat the butter on high speed until creamy. On medium-high speed beat in 1/4 cup of granulated sugar and the 1/2 cup of brown sugar until completely creamed and smooth. Add in the egg and beat on high until combined. Remember to scrape down sides as needed! Add in the peanut butter and vanilla extract and mix on high until combined.
Mix dry ingredients to the wet ingredients and mix on low just until combined. Cover and chill the dough for at least 30 minutes to 1 hour in refrigerator.
Preheat oven to 350°F and line baking sheet with parchment paper. Set aside.
You will scoop out approx. 1 tbsp of cookie dough each and roll into balls.
Roll them in the remaining 1/2 cup of granulated sugar and also red and green sanding sugars(optional) and arrange on the baking sheet about 2 inches apart.
Bake for 10 minutes or until the tops begin to crack just slightly on top.
Remove from oven and allow to cool for at least 10 mins.
Press the candy kiss into each cookie. You can place cookies in freezer for just a bit so chocolate kiss doesn’t melt!
