Irish Potato Pie
1 frozen pie crust, thawed
4 tbsp. butter
7 slices bacon (thick-cut slices), chopped
5 potatoes, peeled and sliced thin (I used new potatoes due to shortage at store and just sliced them)
1 onion, peeled and sliced thin
1 tbsp. fresh dill
1/2 cup heavy cream
1/2 tsp. Salt
1/4 tsp. Freshly ground pepper
Preheat the oven to 350 degrees F. Place butter and bacon in a large skillet over medium-high heat. Sauté until the bacon is crispy then toss in the onions and cook until translucent. Add in the potatoes and dill. Season with the salt and ground pepper. Gently stir approx. 5 minutes to mix the onions and potatoes and coat in bacon grease. (The potatoes don't need to be cooked through.) Spoon the mixture into the crust and drizzle with heavy cream.
Bake in the oven for 45 minutes or until the potatoes are fork-tender and the crust is golden. Sprinkle with chopped chives or dill.
