Vanilla and Chocolate Chunk Swirl Crumb Cake

Ingredients for Cake

1 1/4 cups all purpose flour

1/2 cup sugar

1/2 tsp. baking soda

3/4 tsp. baking powder

1/2 tsp. salt

6 tbsp. butter, softened

1 large egg

1 egg yolk

3 tbsp. greek yogurt

2 tbsp. milk

1 1/2 tsp. vanilla

1/4 cup cocoa powder


Ingredients for Topping

1/2 cup unsalted butter, melted

2 tsp. milk

1/3 cup granulated sugar

1/3 cup brown sugar

Pinch of salt

1 1/2 cup all-purpose flour

1/4 tsp. ground cinnamon

2 tbsp. cocoa powder

1/3 cup semisweet chocolate chunks


Instructions

Preheat the oven to 350 degrees F.

Grease and flour a loaf tin.


For the Topping

Melt the butter in a bowl. Stir in all ingredients except for the chocolate chips, to make a moist crumbly mixture. Set aside.


For the Cake

Preheat oven to 350 degrees F.

In a large bowl whisk together flour, baking soda, baking powder and salt.

In a medium bowl beat the butter until very smooth. Add the sugar and continue to beat until light and fluffy. Continue beating while adding egg and yolk one at a time. Add the yogurt, milk and vanilla to mixture. Add in the flour mixture a little at a time just until mixed.

Once completely mixed pour about 1/3 of the batter into a separate bowl. In that separate bowl add the cocoa powder and mix well.

To assemble the cake pour half of the vanilla batter into the prepared loaf pan. Top with half of the chocolate batter and then half of the topping mixture. Repeat again with vanilla batter and chocolate batter and chocolate chunks. Take a knife and gently swirl it through the batter a few times. Cover the batter with the the crumb topping mixture and bake for approx. 45-60 minutes until a skewer inserted into the centre of the cake comes out clean.
