I’m heading to Brazil for this Fantastic treat!

Forget looking for Easter Eggs.. I’d rather gather up these delicious cheese rolls and place them in my Easter Basket!

Ingredients

1 cup whole milk

2 tbsp. butter

2 tbsp. Vegetable oil

2 cups sweet tapioca flour

1 tsp. salt

2 eggs

1 1/2 cups Parmesan cheese, grated


Instructions

Preheat oven to 400 degrees F.

Combine the milk, butter and oil in a small saucepan and bring to to boil over medium heat.

Add the tapioca flour and salt into mixing bowl of a stand mixer.

Pour in the hot milk to flour mixture and mix on low until smooth. It will look very stringy. Once cool to the touch, mix in the eggs one at a time until fully incorporated. Scrape down sides of bowl as needed.

Mix in the cheese on medium speed until fully incorporated. The dough will look very sticky. It will not be completely smooth.

Line two baking sheets with parchment and scoop the dough out by large tablespoons, spaced an inch apart. You may need to dip your spoon in water between scoops to prevent sticking.

Bake approx. 15 minutes until lightly golden and and puffed. The interiors should be soft-set and elastic.

Cool for just a few minutes and eat warm.
