I'm heading South for the Winter!

Yep.. in my kitchen that is! There is nothing better than waking up to the warmth of the sun, a hot cup of coffee and some delicious homemade southern style biscuits!

Homemade Cheddar Bacon and Chive Buttermilk Biscuits


3 slices cooked bacon, chopped

2 and 1/2 cups all-purpose flour, plus extra for work surface

2 tbsp. baking powder

1 tsp. salt

1/2 cup (1 stick) butter, cubed and cold

1 cup plus 2 tbsp. chilled buttermilk, divided

2 tsp. honey

3/4 cup shredded sharp cheddar cheese

2 tbsp. chopped chives

Butter and jam, for serving


Preheat oven to 400 degrees F.

Place the flour, baking powder, and salt together in a large bowl and whisk until combined. Add the cubed butter and cut into the dry ingredients with a pastry cutter until coarse crumbs form.

Make a well in the center of the mixture. Pour 1 cup of the buttermilk and honey into well. Fold everything together with a large spoon until it begins to come together (do not overwork the dough). Add the chopped bacon, cheddar cheese and chives. Mix with dough and turn out onto clean lightly floured surface. Flatten dough into rectangle. Cut 3-inch circles with biscuit cutter (don't turn but just press down).

Re-roll scraps until all the dough is used. You should have about 6 biscuits. Arrange together greased baking sheet. Make sure the biscuits are touching.

Brush the tops with the remaining buttermilk. Bake for 20 minutes or until tops are golden brown.

Serve with butter and jam.
