I’m BANANAS over this Bread!!

Bananas over Banana Bread
2 cups all purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 cup butter, room temp
3/4 cup packed light brown sugar
2 large eggs, room temperature
1/4 cup sour cream
2 cups mashed bananas (approx. 4 large very ripe bananas)
1 tsp. pure vanilla extract
1 cup walnuts
Preheat oven to 350 degrees F. Grease a 9×5 inch loaf pan and set aside.
In large bowl whisk together the flour, baking soda, salt, and cinnamon. Set aside.
Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and brown sugar together on high speed until creamy. Lower to medium speed and add the eggs one at a time, beating after each addition. Beat in the sour cream, bananas, and vanilla extract until combined. With the mixer now to low speed, slowly beat the dry ingredients into the wet ingredients. Do not overmix. Fold in the nuts.
Spoon the batter into the prepared baking pan and bake for 60 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.
