What a fantastic idea! So McDonald’s did just that!
McDonald’s introduced the McGriddle in 2003, predating the sweet and savory craze by nearly a decade. It was expertly crafted and a perfectly balanced breakfast of sweet and salty flavors.
My CopyCat McGriddle Sandwich
1 cup milk
5 large eggs, (divided, 1 egg for the pancake 4 eggs for the omelette )
2 tbsp. for cooking
3 tbsp. Butter, melted
1 cup all-purpose flour
2 tbsp. granulated sugar
1 tsp. baking powder
1/4 tsp. salt
6 slices bacon, cooked and cut into halves
4 slices American cheese
Salt and pepper
Instructions for Pancakes
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter and mix until smooth.
Heat oil on griddle or skillet over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and then set aside.
Instructions for Omelette
In a medium bowl, beat eggs until no whites remain, then season with pinch of salt and pepper. In a medium non-stick skillet over medium heat, melt butter. Pour in eggs and tilt pan so eggs fully cover the entire pan. As eggs set, use a rubber spatula to fold omelette over.
Allow to cook until done. Cut into approx. 4 even squares.
Assembling the McGriddle
Place the pancake on clean surface and using a round cookie cutter press firmly in center of pancake. Remove excess pancake.
Place one piece of cheese on top of the pancake. Then place 3 pieces of bacon on top of cheese.
Place omelette on top of bacon.
On bottom of second pancake spread small amount of maple syrup.
Finally cover with the second pancake.
Place into the microwave for approx. 15 seconds to slightly melt the cheese.
