I like this kind of Mess!

A Hot Mess Baked Chicken Dish


5 strips thick bacon, diced 1 tbsp. vegetable oil

1 tbsp. butter

1 pound chicken tenders

Kosher salt, to taste

Fresh ground pepper, to taste 1 tsp. garlic powder

1/2 tsp. smoked paprika

Ingredients for the Cream Cheese Spread

4 ounces cream cheese, softened

1 tsp. garlic powder

1/2 tsp. onion powder

1/4 tsp. dried dill weed

1 tsp. chives, chopped

4 ounces yellow cheddar cheese, shredded


Preheat oven to 400 degrees F.

Grease a 9x13 baking dish with cooking spray and set aside.

In a large skillet over medium-high heat add in your diced bacon and cook until crispy.

Remove bacon with slotted spoon and place on plate lined with paper towel. Leave rest of bacon fat in skillet.

Add the vegetable oil to the remaining bacon fat.

Season chicken tenders with salt, pepper, garlic powder, and smoked paprika.

Add chicken tenders to the hot oil and cook for about 4 minutes or until golden brown. Flip the chicken breasts over, add butter, and continue to cook for 3-4 more minutes.

Remove chicken breasts from skillet and arrange in prepared baking dish. Set aside.

In a small bowl combine the cream cheese, garlic powder, onion powder, dried dill weed, chives and 1/2 of shredded cheese. Mix until thoroughly combined. Top each chicken breast with 2 tablespoons of the cream cheese mixture. Spread to coat the surface of each chicken breast. Take half of the bacon and add on top of the cream cheese.

Sprinkle remaining cheddar cheese over the chicken breasts.

Bake, uncovered, for 15 minutes, or until chicken is cooked through and cheese is melted and lightly browned. Remove from oven and garnish with remaining bacon and chives.
