I like it SWEET, SAVORY and SPICY!
Hawaiian Pineapple Rice
1 1/2 cups water
1 cup crushed pineapple in pineapple juice
2 tsp. sugar
2 Tbsp. unsalted butter
1/2 tsp red pepper flakes
1 cup jasmine rice, not quick-cooking
Fresh squeezed juice from small lime
Fresh cilantro, chopped
In a medium saucepan add the water, pineapple, sugar, butter, salt, and chili flakes. Cover and bring to a simmer over medium heat. Stir in the rice and reduce heat to low. Simmer for approx. 15-20 minutes, partially covered, until all of the water has been absorbed.
Remove the saucepan from heat and allow to steam completely covered for about 5 more minutes.
Fluff rice with a fork. Stir in lime juice and chopped cilantro.
