Bacon and Parmesan Egg in a Hole!

Ingredients

4 slices bacon, halved crosswise

4 slices bread of your choice

1 tbsp. unsalted butter, at room temperature

4 large eggs

6 tbsp. Parmesan cheese, freshly grated

1 tsp. fresh thyme leaves

Kosher salt and freshly ground black pepper, to taste

1 tbsp. chopped fresh chives

Hot sauce, optional


Instructions

Preheat oven to 400 degrees F.

Place bacon halves on baking sheet and bake for approx. 20 mins. or until fully cooked. Remove from oven and place bacon on paper lined plate to absorb excess oil.

Using a 3-inch biscuit cutter, make a hole in the center of each bread slice.

Heat a skillet over medium-low heat and melt the butter. When the butter is evenly spread out on skillet place the slice of bread onto skillet and gently crack the egg into the center of the hole keeping yolk intact.

Cook until the egg sets on the bottom, approx. 30 to 45 seconds. Sprinkle the egg with salt and pepper. After about a minute, flip it over with a spatula and salt and pepper the other side. Add the bacon on top of bread and place in oven on broil for just few seconds. Remove from oven and sprinkle with Parmesan cheese and thyme; season again with pepper if needed. Garnish with the chopped chives and hot sauce.
