Green Eggs and Ham with Lemon Dill Pesto!

1/2 cup fresh parsley

1/3 cup vegetable oil

1/4 cup fresh dill, chopped

1 1/2 lemons, juiced

1 large garlic clove, minced

Pinch of sea salt

Pinch of freshly ground pepper


4 eggs

1 tbsp. olive oil

1/2 medium onion, diced

3/4 cup diced ham

2 garlic cloves, minced

1 tsp. Red pepper

1/4 tsp. ground cumin

1/4 tsp. sea salt

3 cups kale or bibbed lettuce

Olive oil, dill, Red pepper, and black pepper for garnish


Preheat oven to 350 degrees F.

Place all the ingredients for the Lemon Dill in medium bowl. Whisk until well blended.

Heat olive oil in cast iron frying pan over medium-high heat. Add the onion and cook for 3-4 minutes, until translucent. Lower the heat to medium and continue to cook until the onion is very soft and starting to brown, approx. 8 minutes. Add the ham to the pan and cook for 10-15 mins. Add the garlic, Red pepper, and sea salt and cook until the spices are fragrant. Add the lettuce to the pan and let it wilt.

Take the pan off the heat. Crack the eggs into pan and place the pan in your oven for approx. 10 minutes or until the white are set.

Serve the eggs topped with the lemon dill pesto and all other toppings.
