Cheesiest Cheddar and Bacon Potato Muffins

Ingredients
3 cups leftover Bacon Cheddar mashed potatoes (recipe on my website)
1 large egg
1/2 cup extra sharp cheddar cheese
Salt to taste
Pepper to taste
For garnish
1/2 cup sour cream
2 1/2 tbsp. Chives, chopped
Instructions
Preheat the oven to 375 degrees F. Grease a muffin pan with cooking spray.
In a large bowl stir together the mashed potatoes, egg, 1/4 cup more cheddar cheese and 2 tbsp. chopped chives. Season the mixture with salt and pepper. Scoop out the potato mixture evenly into the prepared muffin pan, packing the potatoes down firmly into each cup.
Bake the muffins for approx. 30 to 35 minutes until golden brown and crisp around the edges. Remove from the oven and top the muffins with the remaining 1/4 cup cheddar cheese and then return them to the oven for about 3 more minutes. Remove from oven and allow to cool for 5 mins. Top with chopped chives and sour cream.
