Roasted Asparagus with Homemade Aioli Sauce

Ingredients for Asparagus

1 bunch Asparagus spears, trimmed

2 tbsp. extra virgin olive oil

3 cloves garlic, minced

1/2 tsp. Kosher salt

1/4 tsp. Freshly cracked pepper

1 tsp. Red pepper flakes

2 tbsp. Parmesan cheese

Ingredients for Aioli Sauce

1/2 cup light mayonnaise 3 cloves garlic, minced

2 tsp. Fresh lemon juice

1/4 tsp. Dijon mustard

2 tsp. Olive oil

Pinch cayenne pepper

Kosher salt and freshly cracked pepper, to taste


Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.

Place the trimmed asparagus in a large bowl. Add the olive oil and garlic and toss to evenly coat the asparagus. Transfer the asparagus onto prepared baking sheet and arrange into one even layer. Sprinkle tops with salt, pepper and red pepper flakes. Bake for about 20 minutes, or until the asparagus are just tender. Remove from oven and sprinkle with freshly grated Parmesan cheese. Drizzle with the homemade Aioli Sauce!
