Deep Fried Loaded Mashed Potatoes

Ingredients

6 slices bacon

2 cups vegetable oil or as needed

3 cups leftover mashed potatoes (I’ll have that recipe for you in another post)

1 cup shredded cheddar cheese

2 tablespoons fresh chives, chopped

1/2 teaspoon cayenne pepper

Salt

Pepper

2 large eggs, beaten

2 cups Italian bread crumbs

1/2 cup freshly grated Parmesan cheese

Hot sauce is optional (I used Cholula brand)


Instructions

Cook bacon in large skillet over medium heat until crispy. When finished cooking place bacon on paper lined plate to absorb excess oil. When cooled crumble bacon and set aside.

Heat the vegetable oil in a large skillet or stockpot over medium heat.

In a large bowl combine the mashed potatoes, cheese, chives, cayenne pepper, salt, pepper and bacon.

Scoop mashed potato mixture (approx. 1 1/2 tablespoon amount) and roll the mixture into balls.

Working one at a time, dip balls into beaten egg then roll in the Italian bread crumbs, pressing to coat.

Working in batches, add potato balls to oil and cook until evenly golden and crispy, about 3-4 minutes. Transfer to a paper towel-lined plate or baking sheet lined with parchment paper.

Sprinkle with Parmesan cheese, salt, pepper, and chives and serve hot! Don’t forget to splash on a bit of hot sauce too!
