Hamburger Stuffed Potato Pancakes!
5 medium Yukon gold potatoes, peeled and shredded
1 medium onion, chopped (use 3/4 for potatoes and 1/4 for meat filling)
1 large egg
3 Tbsp. all purpose flour
1 tbsp. Garlic, minced
1 tsp. Salt
1/2 tsp. Freshly ground pepper
2 tbsp. olive oil
1 lb. ground beef
1/4 cup plain bread crumbs
2 tbsp. Parsley, chopped
Hot sauce and ketchup (optional)
In large bowl mix together ground beef, onion, garlic, bread crumbs and parsley. Shape into patties and set aside.
In large bowl mix together the shredded potatoes, egg, salt, pepper and flour. Add in onions and mix thoroughly.
Instructions for the Stuffed Potato Pancakes
Heat large skillet with olive oil and place a large spoonful of potato mixture in shape of disc onto heated skillet. Cook both sides until light golden brown. In separate skillet place small hamburger patties and cook on both sides until no longer pink. Place patty on top of potato cake and top with another potato cake. Cook until golden brown on both sides. Top with fresh parsley and serve with hot sauce and catsup. (Optional)
