Forget that Store Bought Stuff
I've been so busy getting ready for Christmas that I need some quick easy meals to make! I have the PERFECT idea! HAMBURGER HELPER!!! If you haven't heard of it, well, let me tell you about the store bought boxed mix! It contains dry noodles, a spice packet, and a powdered packet for the sauce! The only other ingredients you need are milk, ground beef, and sometimes cheese. I'm in no way implying that it's not good! I just think that my homemade recipe is WAY better than that box stuff! So give it a try and see for yourself!
Cheesy Homemade Hamburger Helper
2 tbsp. olive oil
1 large yellow onion, chopped
3 medium-sized carrots, chopped
1/2 tsp. kosher salt
1/4 tsp. black pepper
3 tsp. minced garlic
1 pound lean ground beef
3 tsp. hot sauce
2 tsp. Dijon mustard
1 tsp. Onion powder
2 tsp. smoked paprika
1 cup sodium beef broth
1 1/2 cups water, plus more if needed
8 ounces medium shell pasta
1/2 cup plain Greek yogurt
1 cup sharp cheddar cheese, shredded or grated
1/4 cup chives, chopped
Heat olive oil in a deep 12-inch skillet over medium-low heat. Add the onions and carrots and cook until tender, approx. 10 mins. Season with salt and pepper. Add the garlic and let cook until fragrant, about 30-40 seconds. Increase heat to medium-high and add the ground beef. Break the meat up into small pieces. Continue to cook until the meat is browned and cooked through.
Remove pan from the heat and drain off any excess fat if needed. Return the pan to heat and stir in the hot sauce, Dijon, onion powder and smoked paprika. Then add the beef broth. Next add the water and stir to combine. Bring the liquid to a boil over medium-high heat. Once the liquid is boiling, add the dry pasta to skillet and cook until al dente according to package instructions. (I ended up adding a tiny bit more water and put a lid over mixture to help cook noodles. This method allows the noodles to absorb all the delicious flavors).
When noodles al dente, remove the pan from the heat and allow to cool for just a minute. Add the Greek yogurt and cheddar cheese and stir until the cheese is melted and the ingredients are well combined.
