Fluffiest Homemade Pancakes with Chocolate Chips

I LOVE PANCAKES! Especially a big stack of light and fluffy ones with melted butter and warm maple syrup! I'm always tweaking my original recipe to see if I can get it to absolute perfection! Well guys...I succeeded! Look no further because I now have the perfect recipe for you! Oh and btw..I added some yummy chocolate chips (requested by my son) to make it extra delicious!


2 cups all purpose flour

4 tbsp. granulated sugar

4 tsp. baking powder

1/4 tsp. baking soda

Pinch of salt

1 1/2 cups milk, room temp

1 large egg, room temp

2 tsp. pure vanilla extract

4 tbsp. butter, plus extra for brushing and serving

3/4 cup semi-sweet chocolate chips (optional)


In a large bowl sift together the flour, sugar, baking powder, baking soda and salt. Set aside.

In a small bowl whisk together the milk, egg, and vanilla.

Melt the butter and then allow it to cool slightly. Whisk it into the wet ingredients.

Make a well in center of flour mixture and pour the wet ingredients into the well. Slowly mix together until smooth. It's ok if there are some lumps in the batter. (Do not over mix). If adding chocolate chips now is the time to fold them into the batter. Set batter aside and allow to rest while heating up your griddle.  Heat griddle over low-medium heat and place a tbsp. of butter onto griddle. Allow butter to melt. Distribute evenly on griddle by using a pastry brush.

Using a ladle, scoop about 1/4 cup batter onto the hot griddle and spread out in round shape using back of ladle.

Cook pancakes until the edges of the underside are golden and you start seeing small bubbles on surface. Then flip the pancake and cook until golden. Repeat with remaining batter.

Serve with butter, warm maple syrup, and powdered sugar!
