Rum Pineapple Upside Down Cake


3/4 cup butter

1/4 cup oil

1 cup buttermilk

2 2/3 cups all-purpose flour

3 eggs

2 large egg yolks

1 tsp salt

2 1/2 tsp. baking powder

1 tsp pure vanilla extract

5 tbsp. spiced dark rum

For the topping

1 can pineapple chunks

1 can maraschino cherries

1 cup light brown sugar

1 cup walnuts

1 stick unsalted butter


Preheat oven to 350 degrees F.

In medium bowl whisk together flour, baking powder and salt and set aside.

Using mixer cream the softened butter and sugar. Add oil and mix.

Add eggs and yolks, one at a time and mix thoroughly then combine vanilla and rum.

Add alternately flour mixture and then the buttermilk and end with flour and mix.

In cast iron skillet or oven safe pan melt 1/2 stick butter on stove top.

Pour cup of brown sugar in the melted butter, mix and spread evenly on bottom of skillet.

Turn off heat and add can of drained pineapple chunks evenly over melted butter/brown sugar mixture.

Arrange maraschino cherries(sliced in half) between pineapple chunks.

Sprinkle chopped walnuts evenly over pineapples and cherries.

Bake for approx. 25-30 minutes or until toothpick inserted in middle comes out clean.

Allow cake to cool then carefully place larger plate over the skillet and flip over quickly.
