Lime and Tequila Chicken Tortillas

Ingredients

1/2 cup tequila

Juice of 3 large limes

2 cloves garlic, minced

3 jalapeños, diced

Freshly ground black pepper

Kosher salt

8 chicken tenderloins

1 tbsp. Olive oil

6 small Corn tortillas, warmed

1 avocado, sliced

1/4 head red cabbage, shredded

1/2 c. cotija cheese, grated

1/2 cup cheddar cheese

Lime wedges, for serving


Instructions

Preheat oven to 350 degrees F.

Place corn tortillas on baking sheet lined with parchment paper and heat in oven for 15-20 mins. Remove and set aside.

In a large baking dish whisk together the tequila, lime juice, garlic, jalapeño, salt and pepper. Add chicken and allow to marinate in the fridge for at least 30 minutes to 1 hour.

Heat olive oil in skillet over medium-high heat. Cook the chicken until golden brown and no longer pink inside. Let it rest for at least 10 minutes before slicing.

Add chicken to warm tortillas with the avocado, cabbage, sliced jalapeño, cheddar and cotija cheeses.

Top with lime juice and salsa verde!
