The Cheesiest Cheeseburger Bacon Soup! 🍔

1 lb. ground beef
1 cup chopped onion
1 cup shredded carrots
3/4 cup diced celery
1 tsp. dried basil
1 tsp. Dried oregano
1 tsp. dried parsley flakes
4 tbsp. butter divided
3 cups chicken broth
4 cups peeled and diced potatoes 1/4 cup all purpose flour
3 cups shredded Velveeta cheese
6 slices cooked bacon, chopped and divided
1 cup heavy cream
3/4 tsp. salt
1/2 tsp. pepper
1 cup cheddar cheese, shredded
Sour cream (optional)
In a large sauce pan over medium-high heat, fry the bacon until crisp. Remove bacon and set aside on paper lined plate, leaving 1/4 of the drippings in the pot.
Add the beef to the pot and start crumbling the beef and cook until browned and no longer pink. Drain and set aside.
Reduce heat to medium and add the butter and once melted add the diced onion. Cook until tender, approx. 5 minutes.
Add the carrots, celery and potatoes and cook for 10 mins.
Whisk in flour until lightly browned, about 1 minute and then add 3 cups of chicken broth. Add the parsley, basil and oregano. Season with salt and pepper.
Add beef back in pan and stir. If the soup is too thick you can add more broth. Bring to a boil. Reduce heat and simmer, covered, until potatoes are tender, approx. 10-12 minutes.
Reduce heat to low. Stir in heavy cream. Taste and adjust for salt and pepper.
Stir in the velveeta cheese until it melts and add the 3/4 of the bacon into soup.
Serve garnished with the remaining bacon, cheddar cheese and parsley.
Top with sour cream (optional)
