Creamy Split Pea Soup 🍲

1 pound dried split peas , rinsed and sorted

6 slices cooked bacon, chopped

1/4 cup unsalted butter

1 cup onion, chopped

1 cup carrots, shredded

1 cup celery, diced

1 tsp. kosher salt, plus additional to taste

1/2 tsp. freshly ground black pepper , plus additional to taste

3 cloves garlic , minced

1 ham bone

1 large bay leaf (or 2 small)

2 tsp. fresh thyme leaves, chopped

6 cups chicken stock

1 cup half and half

1 cup diced ham

1 cup Buttery Garlic croutons


In a large pot melt butter. Add the onions, carrots, celery, 1/4 teaspoon salt and 1/2 teaspoon pepper. Cook until vegetables are tender and beginning to brown, approx. 5-10 minutes. Add the garlic and cook for 1 minute, until aromatic. Stir in split peas. Add the ham bone, bay leaf, and 1 tsp. fresh thyme. Stir in the chicken stock and bring to a boil, reduce heat, and simmer uncovered for 90 minutes, stirring occasionally, until split peas are cooked down and soup is thickened to desired consistency.

In last 30 minutes, remove ham bone. Using a large slotted spoon, put approx. 2/3 of the peas into a blender along with the half and half cream and puree for one minute. Pour back into pot. Cook for additional 30 minutes adding the diced ham and 1/2 of the chopped bacon during the last 15 minutes of cooking. When ready to serve, remove and discard bay leaf. Season to taste with salt, if needed. Serve hot topped with buttery garlic croutons, chopped bacon pieces, cracked black pepper and thyme.
