Since I’m winding down my “Italian” theme week and heading into “EAT YOUR VEGETABLES” week I think I’ll show you a wonderful dish I prepared that represents both!
Fiery Roasted Roma Tomatoes
10 Roma tomatoes, cut in half lengthwise
1/4 cup extra virgin olive oil
1 tbsp. balsamic vinegar
1 tbsp. Italian seasoning
1 tsp. sugar
3 garlic cloves, finely minced
1/4 tsp. kosher salt
1/2 tsp. Red pepper flakes
1 1/2 tsp. Kosher salt
1/2 tsp. Freshly cracked black pepper
fresh parsley for garnish
Preheat the oven to 400 degrees F.
In large bowl toss tomatoes with the olive oil, Balsamic vinegar, Italian seasoning, sugar, red pepper flakes, salt, pepper and garlic in a bowl.
Arrange tomato halves on a large baking sheet. Roast until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.
