Apple Pie and French Toast are two of my favorites so I'm gonna ROLL them up into one!
Apple Pie French Toast Rollups
Ingredients for Apple Filling
3 Tbsp. butter
3 medium Granny Smith apples, peeled, cored and diced into small cubes
1/3 cup light brown sugar
1 tbsp. sugar
2 tbsp. water
1 tsp. cinnamon
1/8 tsp. nutmeg
Squeeze of fresh lemon juice
Ingredients for French Toast
6 Thomas Cinnamon Swirl Bread Slices
3 tbsp. milk
1/3 cup sugar
1 tsp. ground cinnamon
1 tsp. Pure vanilla extract
6 tsp. cream cheese, room temp
2 tbsp. butter for cooking, plus more for serving
Melt butter in a medium, heavy skillet over medium heat. Add apples, brown sugar, sugar, water, cinnamon, nutmeg and lemon juice to pan. Stir well until combined. Sauté until tender and golden, 10 to 15 minutes. Remove from heat and set aside.
In a small bowl beat eggs. Whisk in milk, sugar, cinnamon and vanilla and set aside.
In another small bowl combine 2 tsp. Sugar and 1 tsp. Cinnamon. Stir until combined. Remove the bread from package and flatten the slices with a rolling pin. Spread about 1 tsp. of cream cheese evenly on each slice of bread. Add about 2 tsp. of the apple filling along one edge of the bread and gently but tightly roll up the bread around the apple filling. Continue with the remaining bread slices.
Heat a non-stick pan over medium heat and melt 1 tbsp. of butter. Coat the rolls in the egg mixture and place seam side down onto a flat pan. Cook 4 rolls at a time. When browned, turn each a quarter turn and continue until all sides are cooked and browned. Wipe down pan with a paper towel and repeat until all rolls are cooked. Roll them into the sugar cinnamon mixture. Serve warm with maple syrup!
