Apple Pan Dowdy

Ingredients For Dough

3 tbsp. Ice water

1 tbsp. Sour cream

2/3 cup all purpose flour

1 tsp. Sugar

1/2 tsp. Salt

6 tbsp. Butter, well chilled and cut into small cubes

Ingredients for Filling

2 1/2 pounds golden delicious apples, peeled, cored, cut into slices.

1 tbsp. Freshly squeezed juice from lemon plus zest

1 tsp. Vanilla extract

3/4 cup light brown sugar

1 tsp. Cinnamon

1/2 tsp. Allspice

1/4 tsp. Salt

1 tbsp. Flour

3 tbsp. Butter

1 egg plus 1 tbsp. Milk, beaten, for egg wash

1 tbsp. Sugar and 1/4 tsp. Cinnamon, stirred together, for sprinkling

Vanilla Ice Cream, for serving

Instructions for Dough

In small bowl whisk together ice water and sour cream. Set aside.

Add the flour, sugar and salt to food processor and mix for a few seconds.

Add cubed butter to processor and pulse approx. 8 times or until butter is well mixed with flour and appears like small pebbles.

Add sour cream mixture to processor and mix well, about 3-4 pulses.

Transfer dough to lightly floured surface and pat into 4 inch disk. Wrap with plastic wrap and place in refrigerator for 1 hour.

Remove from refrigerator and roll out dough into 10 inch or so circle. Using pizza cutter cut dough into approx. 2 inch squares (it doesn’t have to be perfect). Place squares carefully on small baking sheet lined with parchment paper and cover with plastic wrap. Place back in refrigerator for about 20 mins.

While dough back in refrigerator, start making the filling and preheat oven to 375 degrees F.

Instructions for Filling

Place apples, lemon juice, zest, vanilla extract, brown sugar, cinnamon, allspice, salt and flour into large bowl. Toss together until well mixed.

In a 12 inch skillet melt the 3 tbsp. Butter. Add the apple filling mixture and cook until tender, about 20 mins. stirring occasionally. Remove skillet from heat and place pie dough pieces over apples.

Brush tops of dough pieces with egg wash.

Sprinkle dough with sugar cinnamon mix.

Bake in oven for 15 mins. and then take skillet out of oven and using back of large spoon press down on top of dough pieces. This allows juices from filling to flow over crust. Place back in oven for another 15 mins. Then turn broiler on high and broil for a few mins. just until top of crust is golden brown.

Allow to cool just a bit before serving with vanilla ice cream.
