Another Version of my Favorite Meal

Shepherd's Pie is hands down one of my FAVORITE meals to cook for my family! You literally have meat, veggies and potatoes all mixed into one perfect dish! This recipe is very similar to the one I made a few months ago however it turned out a bit creamier and richer. I'll just say it was pretty outstanding!


Easy Shepherd's Pie Recipe

Ingredients for Meat Mixture

2 tbsp. olive oil

1 yellow onion, peeled and chopped

1 lb. lean ground beef

2 tsp. dried parsley

1 tsp. dried rosemary

1 tsp. dried thyme

1/2 tsp. salt

1/2 tsp. freshly ground black pepper

1 tbsp. Worcestershire sauce

2 garlic cloves, minced

2 tbsp. all purpose flour

3 tbsp. tomato paste

1 cup beef broth

1 bag frozen mixed vegetables

1 cup shredded cheddar cheese

Ingredients for Mashed Potatoes

1 1/2 pounds Yukon gold potatoes, peeled and cut into small cubes

1 stick butter

1/3 cup half and half

1/2 tsp. garlic powder

1/2 tsp. salt

1/4 tsp. ground black pepper

Instructions for Meat Mixture

Add the olive oil to a large skillet and place over medium-high heat for about 2 minutes. Add the onions and cook until tender, about 5 minutes.

Add the ground beef to the skillet and break apart with a wooden spoon. Add the parsley, rosemary, thyme, salt, and and pepper and stir well. Cook until the meat is browned, stirring occasionally.

Add the Worcestershire sauce and garlic. Stir to combine. Cook for 1-2 minutes.

Add the flour and tomato paste and stir until well incorporated. Add beef broth and stir well.

Add the frozen vegetables and bring heat to a boil and then reduce to simmer. Allow to simmer for 6-7 minutes, stirring occasionally and then remove from heat and set aside.

Preheat oven to 350 degrees F.

Instructions for Mashed Potatoes

Place the potato cubes in a large pot. Cover the potatoes with water just an inch over top of potatoes. Bring the water to a boil and then reduce to a simmer. Place lid on top of pot and cook until potatoes are fork tender, about 10-15 minutes.

Drain the potatoes in a colander. Return the potatoes to the pot. Let the potatoes rest for 1 minute.

Add butter, half and half, garlic powder, salt, and pepper. Using hand held mixer, mash the potatoes making sure all the ingredients are well mixed together.

Assembling Casserole

Pour the meat mixture into a 13x 9 inch baking dish. Spread it out into an even layer. Sprinkle cheddar cheese evenly over meat mixture. Spoon out the mashed potatoes on top of the meat and cheese. Carefully spread into an even layer (fluff potatoes with knife if you want to make it more decorative).

Sprinkle a bit more cheddar cheese on top and sprinkle with more black pepper.

Bake uncovered for approx. 30 minutes.

Cool just a few minutes before serving!
