An Italian Favorite
Beef Spiedini Recipe
1 lb. top round, sirloin tip, bottom round or rump, (whichever you choose) sliced very thin
6 yolks from hard boiled eggs
2 tbsp. garlic, minced ( 6 cloves)
1 cup Italian bread crumbs
1 cup Parmigiano-Reggiano cheese
1/4 cup fresh parsley, finely chopped
2 tbsp. dried Italian seasoning
1/2 cup Extra virgin olive oil
1 cup diced tomatoes
Salt and pepper, to taste
Preheat oven to 350 degrees F.
In a large bowl combine the egg yolks from hard boiled eggs, garlic, Italian bread crumbs, Parmigiano-Reggiano cheese, parsley, Italian seasoning, diced tomatoes, olive oil, salt and pepper. Mix well making sure it is a moist consistency. (You can add extra olive oil if needed).
Place slice of meat onto clean surface. Spoon 1 tbsp. of filling onto wider end of meat and roll tightly to the other end. Secure with toothpick. Repeat this step with rest of meat slices. Place side by side onto 2 large baking sheets.
Place in oven and bake for 20-25 mins. Remove from oven and brush olive oil on top!
Sprinkle with parsley.
Serve with red sauce for dipping.
