A Quiche Will Never Cease to Please Me!



Bacon Ham and Sharp White Cheddar Potato Quiche

Ingredients

2 tbsp. vegetable oil

1 tbsp. Butter

1/2 of a 20-ounce bag Simply Potatoes Diced

1 small yellow onion, chopped

1 refrigerated pie crust

4 large eggs

1 1/4 cup half-and-half

1 tbsp. chopped fresh parsley

1/2 tsp. kosher salt

1/4 tsp. Freshly ground coarse black pepper

1/2 tsp. Garlic powder

1/2 tsp. Onion powder

3-4 slices bacon, cooked and crumbled

1/2 cup ham, cooked and diced

1/2 cup sharp cheddar cheese, shredded


Instructions

Preheat oven to 400 degrees F.

Pierce sides and bottom of the pie crust with a fork.

Bake crust for 5 minutes.

Remove from oven and set aside.

Heat oil and butter in a large nonstick skillet over medium heat. Add potatoes, cover, and cook for 10-15 mins., stirring occasionally. Add onion and cook for 5 more minutes. Season with salt and pepper and let cool.

In a medium bowl, whisk together eggs, half-and-half, parsley, onion powder, garlic powder, salt, and pepper.

In pie crust layer with half of the cooked ham and bacon over bottom of pie crust. Then add the potato and onion mixture. Sprinkle 1/2 of the cheddar cheese on top of potato and then pour egg mixture on top of cheese. Repeat with other half of ingredients.

Reduce oven temperature to 350 degrees F. Place quiche in oven and bake for approx. 45 minutes.

Slice into wedges!
